My First Vegan Cashew Cream Cheese

My first vegan cream cheese is just delicious.  I should call it cashew spread.

  • 300 gr cashew nuts

  • ground sunflower seeds

  • lemon juice (1/2 lemon)

  • 1/3 tsp turmeric, ginger, horseradish, active brewing yeast and hot pepper (cayenne) 

  • 2 tsp pectin

  • 1:1 black and white pepper + whole cumin (less than 1/3 tsp)


How to prepare the cheese for 10 mins:

  1. Drain the soaked cashews (4 hours in water) and rinse thoroughly.

  2. Blend the cashews until you reach your desired consistency.

  3. Add ingredients.

  4. Place in the fridge (at least 2 hours).

    You can add any aromatics or other flavourings to this basic recipe. Next time I will use pine nuts and raw almonds as well.
